The holidays aren’t perfect in New Mexico without eating posole?the bowl of blessedness, a popular Southwestern stew originally made by the ancients in New Mexico and Mexico. The sacred blessings came from corn being the staple. So much so that the Corn Goddess, was the giver of life.
Prior to modern transportation and communication, posole was often the dish eaten for survival. Even though it is little known, blue corn has 100% nutrition?all the vitamins, minerals and essential amino acids for good health.

Although the swine influenza had been renamed to the influenza H1N1 type A in the end of April and the related departments, such as Ministry of Health of PRC, ensured again and again that it is safe to eat pork, the price of the pork was dropping in Chinese market. Recently, all the reports On Chinese media seem to indicate that the chief cause that led to the reduction in the price of the pork was the influenza H1N1 type A.

I remember as a child driving into New Mexico when I was old enough to read and noting the A & W signs for Green Chile Cheeseburgers and asking my parents, “What is Green Chile?”
Green chile sounded weird to me, because I was used to the reddish brown canned chili such as Wolf brand which is made with hamburger and tomatoes and such. I couldn’t imagine green chile!
