Legumes are a food that you should be more of, according to the Canada Food Guide. No wonder, considering that these super foods are rich in protein, fiber, vitamins, and minerals.
However, many people have a tendency to askew beans. Bland food only good for chilis and bean salad, they scoff. In reality, legumes are great for all sorts of dishes and prepared correctly they can be tasty too (believe it or not)!

Healthy Food Combinations
SWEET FRUITS
Sweet fruits,especially all dried fruits are a concentrated source of
energy-fruit sugars (fructose) and they require unique digestion.
Simple combinations are best,such as a few dried fruits as a snack are
ideal,however, when combining with other fruits it is best to only have
a slice of apple or oher sub-acid fruit.
Bananas are a concentrated food and should not be combined with any
dried fruit,but can be combined with apple,apricot,peach or pear.
Don’t combine dried fruits with nuts,peanuts or any other food group
as poor digesion and gas will develop. Simple banana milkshakes are
a fair combination and can be nutritious. It is best not to include
any dried fruit in a fruit salad,a few slices of banana is alright.
Dried fruits need to be chewed very well and preferably taken with
a glass of pure water,to ensure that digestion goes smoothly.

Thai Prawn Salad (PHLA KUNG)

INGREDIENTS:
- Prawns 1lb.
- Fresh lemon grass, sliced thin 1/2 cup
- Shallots, thinly sliced 1/4 cup
- Young ginger, julienne 1/4 cup
- Kaffir lime leaves, sliced very thin 4 – 5 leaves
(4 servings)
DRESSING :
- Lime juice 3 tbsp.
- Fish sauce 4 tbsp.
- Sugar 2 tsp.
- Fresh spur chili peppers,
- thinly sliced 6
GARNISHES :
1. Peel the prawns and clean well. Blanch the prawns in boiling water until just done and soak them in cold water to stop them from over cooking, drain and put aside.
2. Toss the prawns and salad ingredients with the dressing. Mix all the herbs well and spoon this salad onto a platter lined with fresh lettuce leaves. Decorate the dish with fresh mint leaves.
Tips
This dish has many variations and is very popular with drinkers in Thailand because its spiciness goes well with either beer or whisky. |
